Flat Iron Steak with Roast veggies and seeded mustard dressing
Serves 2 to 4

For the steak
2 x Flat iron steaks (or your favourite cut of meat)
salt and pepper
3 medium potatoes cut into quarters
2 medium carrot chopped the same size as the potato
2 brown or red onions cut the same
1 sweet potato cut the same
1 bulb garlic
Olive oil
Salt and pepper
For the roast veg
For the dressing
1 tablespoon wholegrain mustard
30ml red wine vinegar
60ml extra virgin olive oil
salt and pepper for seasoning
Method:
Place all the chopped veg into a baking tray and toss in oil, salt and pepper, cook for 30 minutes at 180 degrees until soft and roasted.
Season the steak and add a little oil to a heavy based cast iron pan. bring it to high heat and cook for 4 minutes on both sides or until the internal temperature reaches 50 degrees. Take off the heat and let rest for half the time you cooked it.
once the veg is cooked and the steak has rested, make the dressing by adding all the ingredients to a jar and shaking until it is all combined.
Place the roasted vegetables on a plate, thinly slice the steak and lay on top of the vegetables. top with the dressing and enjoy.
