Curried Sausages

You will need
Serves 4
30ml Geelong Region olive oil
1 red onion diced
3 sausages
1 carrot diced
1 potato diced
10 green beans diced (or zuccini)
1 packet Xo Projects Madras curry sauce
100ml water
dash of cream
salt and pepper to taste
coriander to finish (optional)
Serve with:
Rice or grains of your choosing

15 min cook time
Step 1
Place the oil, onion sausages, carrot, potato, beans into a pan and fry until golden in clour.
Step 2
Add the XO Curry paste with the water and place a lid on the pan. Bring to a boil then turn the heat down to a simmer, cook until the potatoes are cooked (about 10 minutes depending on the size of the dice).
Step 3
Take the lid off and pour into a bowl, drizzle over the cream and serve with rice.
