Curried Sausages

You will need

Serves 4

  • 30ml Geelong Region olive oil

  • 1 red onion diced

  • 3 sausages

  • 1 carrot diced

  • 1 potato diced

  • 10 green beans diced (or zuccini)

  • 1 packet Xo Projects Madras curry sauce

  • 100ml water

  • dash of cream

  • salt and pepper to taste

  • coriander to finish (optional)

Serve with:

Rice or grains of your choosing

Directions

10 min prep time

15 min cook time

Step 1

Place the oil, onion sausages, carrot, potato, beans into a pan and fry until golden in clour.

Step 2

Add the XO Curry paste with the water and place a lid on the pan. Bring to a boil then turn the heat down to a simmer, cook until the potatoes are cooked (about 10 minutes depending on the size of the dice).

Step 3

Take the lid off and pour into a bowl, drizzle over the cream and serve with rice.
