Chocolate mousse

Serves 2
1 cup whole milk
1 cup whole cream
6 egg yolks
125gm caster sugar
150gm 70% dark chocolate chopped
1 teaspoon vanilla extract

Step 1
Place the egg yolks, sugar into a bowl and whisk to combine
Step 2
Place the cream, milk and vanilla into a saucepan and bring to 70 degrees or until you see bubbles forming around the outside of the pan.
Step 3
Pour half of the milk mixture into the eggs and whisk to combine, then return all to the pan on medium heat and bring the temp of the milk, egg mixture to 82 degrees.
Step 4
Chop the chocolate up into fine pieces, place into a bowl then when the milk and egg mixture comes to temperature pour it into the chocolate mixture, Let it sit for 20 seconds then mix everything together so it all melts, Pour into jars or cups and have it warm with a little extra milk to make it more like a hot chocolate or place in the fridge to set it as a chocolate mousse.
Finish with berries or orange segments or whipped cream
