Rainbow Rice

Serves 2

  • ½ cup cooked rice

  • 1⁄4 capsicum - diced

  • 1⁄2 carrot - diced

  • 2 leaves purple cabbage thinly sliced

  • 1⁄4 onion - diced

  • 1⁄4 cup frozen corn

  • 1⁄4 cup frozen peas

  • 1 egg lightly whisked

  • 2 teaspoon oil

  • 2 tablespoon soy sauce

Directions

Step 1

Place the frying pan on the stove top and turn the stove on to a medium heat. Pour 1 teaspoon of the oil in a frying pan and heat the oil.

Step 2

Pour the whisked egg into the pan and cook until egg is set and no longer runny in the middle. Flip the egg and cook for a further minute. Remove from the pan, cool and cut into strips.

Step 3

Return the frying pan to the stove, add the remaining oil and heat to medium heat. Add the diced onion, to the pan and stir fry for about 3 minutes until the onions are soft.

Step 4

Add capsicum, carrot and cabbage to the pan with the onion and cook for 2 minutes or until the vegetables look soft. Add peas, corn and soy sauce to the pan and stir-fry for another minute.

Step 5

Now add the rice and egg strips, stir gently to combine all of the ingredients, make sure the rice is coated in the sauce mixture, and cook until the rice is completed heated through.

Using a large spoon, scoop the fried

rice into bowls and enjoy.
